What to do with all those extra tomatoes

If you have a food dehydrator, dehydrate them.I did that yesterday. I had 2 tomatoes about 5″ in diameter. I sliced them about 3/8 – 1/2″ thick, lightly salted them to help draw out the moisture, and dehydrated them for about 7 hours at 135 degrees. You can also sun dry them, but I haven’t tried that. Same with oven drying. But you have to watch the temperature.

You will be surprised to see how they shrink up, if you haven’t done this before.

Those 2 rather large tomatoes shrunk down to the total size of about a 3/4″ stack of pringles chips.

http://www.nutritiondata.com/facts/vegetables-and-vegetable-products/2682/2 is a nutrition source. It is for tomatoes off the vine. Dehydrate them and the space you save, while keeping the nutritional value, is enormous.

THey last a long time in the freezer. And they take up so little space it’s not even a consideration. Reconstitute with boiling water, and save the water.

It’s a good addition to any SHTF preps.
